What are your favorite Turkey day foods / recipes?
This year I'm going to smoke our turkeys again because I got raving reviews last year!
Another favorite of mine is corn bread casserole (corn pudding). Here is a great example recipe, id do the same thing with maybe a little more butter and sour cream for a more creamy texture.

This is one I've eaten traditionally ever since I was little.  My mom didn't put the oj in it tho.  I love this stuff! 

One of the traditions I use to do was to make homemade pies and the whole traditional turkey dinner,  turkey, mashed potatoes, stuffing, green beans, sweet potato casserole, cranberry Sauce, yeast rolls, pies, Cherry Cheesecake... it's just Daddy and I now so I don't cook everything anymore.

Haven't decided if I'm smoking or roasting a bird this year. Thought about frying one but that depends on the weather. If it's raining or 90 degrees I won't be standing outside frying anything. 

I will be making dressing, cranberry sauce, rolls, ambrosia fruit salad, cole slaw, and one or two desserts, possibly a sticky toffee pudding for one, and my hot cocoa or egg nog depending on the temperature.

Eggnog

INGREDIENTS:

  • 3 cups (710ml) whole milk
  • 1/2 vanilla bean or 1.5 teaspoon (6g) vanilla extract
  • 6 egg yolks
  • 1 cup (220g) granulated sugar
  • 1 teaspoon (3g) cinnamon
  • Heaping 1/4 teaspoon (1g) cloves
  • 1 Tablespoon plus 2 teaspoon (7g) ginger powder
  • 1.5 teaspoon (4g) ground nutmeg *ideally fresh ground*
  • *optional* 1/4 cup (60ml) rum, brandy, or cognac 
  • 1.5 cups (354ml) heavy cream

INSTRUCTIONS:

  1. Bring milk to a simmer. While the milk is simmering, have the egg yolks and sugar ready in a separate bowl and using an electric mixer, whip them until they are light in color.
  2. Once the milk has simmered, slowly add the milk into the egg yolk mixture by gradually scooping in a little at a time and stirring until milk has fully combined with the egg yolk mixture. Roughly 1/4 cup (60ml) at a time. Too much too fast and you will end up with scrambled eggs.
  3. Scrape and add vanilla bean or vanilla extract.
  4. Consistently stir for 10-15 minutes using a spatula on low heat to prevent curdling. Do not boil or simmer. Look for a somewhat thick consistency . When a spoon is dipped into it the mixture should coat the spoon and drip slowly not run off like water.
  5. Strain through a fine mesh sieve into a metal bowl.
  6. Place on ice water bath. A larger bowl filled with ice water for this bowl to sit on.
  7. Add cinnamon, clove, ginger powder, nutmeg, rum/brandy, and heavy cream and mix well.
  8. Store in a jar or pitcher and serve as needed. To finish, top with whipped cream and a pinch of nutmeg or cinnamon for garnish.
