Let's get ideas going for all the types of sandwiches out there to put between slices of bread, wrap up in a tortilla, stuff into a pocket, etc. Share your own photos of what you created and list the ingredients. What combos have you done to fuel yourself for that midday meal?

The good old peanut butter sandwich but with fresh fruit (more fiber and nutrients) instead of jam/jelly. I like to sneak a few chocolate chips into mine.Β πŸ˜‹

This I scribbled down on scrap paper as a version that contains more protein. Don't remember where I found it online.

TUNA SANDWICH

  • 5 oz can tunaΒ (I preferΒ stored in water)
  • 1/3 c cottage cheese
  • 2 TB mayo
  • 1/2 TB lemon juice
  • 1 tsp relish (or 1 TB fresh dill)
  • 1 TB oil (skip if the tuna you are using is stored in oil already)
  • 1/2 tsp onion powder
  • 1/2 tsp celery seed
  • 2 TB fresh parsley (2 tsp dried)
  • 1 tsp mustard
  • salt and pepper to your taste

  1. Drain the tuna, then mix well all ingredientsΒ togetherΒ in a small bowl. Use a fork to break up the chunks of tuna.
  2. Spread desired amount onto slices of your choice of bread.
  3. Top with some lettuce. Serve with cherry tomatoes, carrot sticks, sliced cucumbers,Β or celeryΒ on the side if you'd like.

EDIT: I just realized that the texture of this sandwich can be too soft and mushy. To get some crunch I suggest add in diced celery, red onion, water chestnuts, or pickles. Toasting the bread you spread this on would be a great option!

CREAMY ENCHILADA CHICKEN WRAP

100g (3 1/2 oz) chicken pieces

garlic

chili powder

oregano

onion granules

salt & pepper

*cook the chicken both sides on stove top for about 2-3 minutes. Make sure it is cooked all the way through. Set aside to cool.

🌯MIX IN BOWL🌯

30 g (1 oz) black beans (pinto beans should be fine too)

50 g (1 3/4 oz) diced bell peppers

20 g (3/4 oz) shredded cheese

50 g (1 3/4 oz) plain yogurt

20g (3/4 oz) enchilada sauce

Seasoned and cooked chicken pieces

Cilantro

Tortilla or wrap of your choice.

* Pour filling in, then fold up nice and snug! You can toast this if you want (3-4 minutes each side on low heat) for some crispy texture.

High Protein Pizza Rolls

Ingredients:

180g turkey pepperoni

300g marinara sauce

200g blended fat-free cottage cheese

80g 2% mozzarella cheese shredded

Seasoning of your choice (garlic powder, Italian blend, oregano)

8 Tortilla wraps

Directions:

For the filling, stir together in a bowl the pepperoni, sauce, and cheeses. Divide evenly into each of the 8 wraps. Roll and fold up the wraps carefully to keep the yummy filling securely inside. Sprinkle the seasonings over the top of each one. Bake in the oven at 450 F for about 8-10 minutes. These freeze well and can be reheated in the microwave when you are ready to eat them.

Pack these in your lunch with some fresh crunchy veggies or a side salad!
