These are treats made from whole foods. The less processed junk the better it is for you!

BASIC CHOCOLATE FUDGE TRUFFLES

INGREDIENTS

1/2 c soft dates (soaked dry ones in warm water)

1/2 c raw nut butter of choice (almond butter, cashew butter, hazelnut butter, ect.)

1/4 c raw cacao powder or carob powder

INSTRUCTIONS

Blend the dates separately first, to ensure that they will be smooth in the final product. I suggest using a food processor or a handheld blender in a cup. Then add the nut butter and cacao powder. Blend until the entre mixture forms a into a ball of dough. Use a tablespoon or small scoop to measure even amounts of dough and roll in your hands to form balls. Roll in cacao powder and place on plate.

Drop of mint or peppermint oil when blending.

1/4 c unsweetened coconut flakes to roll fudge balls around in.

Raw hazelnut can be added in the middle of each ball.

Orange zest.

Healthier No Bake Cheesecake in a Jar - Hannah Magee RD

Makes 4 servings

For cherry toppings

- 1 cup pitted cherries

- 1 TB pure maple syrup (not pancake syrup)

- 1 TB lemon juice

- 1 tsp water

- 1 tsp cornstarch

For cheesecake filling

- 4 oz cream cheese (I switched this for lowfat cottage cheese)

- 2/3 cup plain greek yogurt

- 2 TB maple syrup

- 1 TB lemon juice

For the crust

- 1/2 cup graham cracker crumbs (I changed this for 1 cup walnuts)

- 2-3 TB butter (I changed this for 6 whole dates)

Instructions

1. Add all cherry toppings into a saucepan over medium heat. SautΓ© for 5-10 minutes, stirring gently every couple of minutes. Eventually it will begin to thicken and form a sauce. You can mash up the cherries some if you want. Remove from the heat and allow the cherries to cool while you prepare the cheesecake filing.

2. In a bowl mix add the soften cream cheese (or cottage cheese), yogurt, maple syrup, and lemon juice. Mix together with a hand mixer until smooth and creamy. Place in the fridge while you make the crust.

3. Melt butter in microwave. Add graham cracker crumbs to a bowl and drizzle on melted butter. Stir until mixed together. (My own version, I toasted the walnuts at 350 F for about 5-7 minutes. Then I put the dates and walnuts into a food processor to grind into a crumbly ball).

4. Distribute your crust mixture evenly into individual serving jars/containers. Pack down gently with your fingers. Divide the cheesecake filling amongst the portions. Tap your jars/containers to settle this layer and spread with a spoon if needed. Finally, top each with the cherries and syrup. Serve right away or let them chill in the fridge for 1 hour.

For mine, I don't care for cooked fruit so I stuck with fresh cherries that I sprinkled some stevia on top. This came up sweet and tasty!

BANANA COOKIES

🍌Ingredients🍌

3 ripe bananas

1/3 cup applesauce

2 cup oats

1/4 cup almond milk (or other milk of your choice)

1/2 cup chocolate chips or raisins

1 tsp vanilla

1 tsp cinnamon

🍌Instructions🍌

First, get your oven heating up to 350 F.Β Mash the bananas with a fork in a medium sized bowl. Mix well the applesauce, milk, and vanilla in. I don't care for the texture of whole oats with my cookies, so I grind that up first to make oat flour in a blender. This step is totally up to you. Add in the oatmeal (or oat flour) along with chocolate chips (raisins) and cinnamon. The consistency should be a bit sticky but not runny. If you feel more milk is needed then go ahead and add in a tablespoon.

Next, line a baking sheet with parchment paper or spray with a nonstick spray. Use a tablespoon to scoop up a dollop of the batter and plop right on the cookie sheet. These cookies won't spread out much when baking so you don't need to worry about keeping them far apart. Fit as many as you want onto the sheet!Β 

Now bake in the oven 15-20 minutes. Enjoy the smells that fill your kitchen while cleaning up. Licking the spoon and bowl are allowed since there are no eggs in the recipe. Once the cookies have cooled enough to eat, enjoy with a glass of milk! These have been great to keep around for my sweet tooth cravings. I recommend storing these cookies in the fridge inside a container with a lid.

1/2 cup nut butter of your choice

1/4 cup honey or maple syrup (not pancake syrup)

1 tsp vanilla

1/2 cup almond flour

1 scoop protein powder (I like the brand Orgain)

1/2 tsp salt (only if your nut butter is unsalted)

Β 

Stir the nut butter, sweetener, and vanilla in a bowl to a smooth consistency. Mix the almond flour, protein powder, and salt (optional) in another bowl. Now combine both dry and wet ingredients together. Use your hands to roll and shape into bite-sized balls. Store these in a container to keep in the fridge or freezer.

mini-chocolate or white chocolate chips (mini M&Ms would be fun!)
