A combo for Pi Day and St Patrick's DayΒ πŸ₯§β˜˜οΈΒ Source -Β Savory Hand Pies - plant.well (beplantwell.com)

Makes 14 pies

Ingredients:

☘️ 4 sheets puff pastry (I couldn't find any vegan ones, so I went with pizza crust dough)

☘️ 8 oz Tempeh (again I couldn't find any 😭 I substituted with about 1 cup dry lentils)

☘️ 1 1/2 c cabbage 

☘️ 1 1/2 c carrots

☘️ 1 1/2 c potatoes

☘️ 1 onion

☘️ 2 garlic cloves

☘️ 1 1/2 tsp dried thyme

☘️ 1 1/2 tsp dried rosemary

☘️ 1 1/2 tsp dried caraway seed

☘️ 1/2 c fresh parsley (2 1/2 TB dried parsley)

☘️ 1 c tomato sauce

☘️ 1 tsp apple cider vinegar

☘️ 1 1/2 tsp salt

☘️ 1 1/2 tsp pepper

Instructions:

  1. Remove puff pastry from freezer and allow to thaw 30-40 minutes. If using pizza dough let that come to room temperature. Preheat oven to 450 degrees F.
  2. Add chopped tempeh to a pan over medium heat with a drizzle of oil and the dried thyme, rosemary, and caraway seeds. Cook for 5 minutes until lightly browned. The lentils I cook with some vegetable broth and seasonings.
  3. Add chopped carrots, onion, potatoes, and garlic to the pan. Cook about 5-10 minutesΒ until the potatoes begin to soften. Add the chopped cabbage to the pot and continue cooking another 3-5 minutes.
  4. Add salt, pepper, tomato sauce, and apple cider vinegar. Cook until fragrant and all ingredients begin to stick together. Lastly stir in parsley.
  5. Roll out pastry or dough to about 1/8-1/4 inch thick. Cut 4-inch circles for each pie. Scoop a tablespoon or two into the center and top another circle of dough on top. Squish together with a bit of water and use a fork to firmly press down sides all the way around.
  6. Cut a couple slits in the middle of the pies and brush with a bit of olive oil if desired. This will make them brown and crispy.
  7. Bake for about 25 minutes until golden brown. The pizza dough instructed 15 minutes which I did. You can broil the pies the last few seconds toward the end to help them brown. All to cool and enjoy!

I wanted to use less dough to get more little pies. Instead of two circles to make a pie I folded one in half. This gave me about 3 dozen to share with the fam. The slit I cut made it look like an eyeΒ πŸ˜„Β They came out really tasty. Hardly any pies were left! Pairs nicely with cheddar cheeseΒ πŸ§€ (although that makes it no longer vegan)
