A bit late in the season in sharing this recipe. Can't believe I didn't think about how amazing chili is!Β  This one has been my favorite that I tweaked a little to my own liking. Originally this is vegan which you can keep as is or add to.Β I'm curious to hear the different ways people like to make theirs. Please share your own below!

Servings: 6-8

Ingredients

πŸ”₯Β 1 medium onion diced

πŸ”₯Β 1 TB oil

πŸ”₯Β 1 green bell pepper diced

πŸ”₯Β 1 yellow or red bell pepper diced

πŸ”₯Β 4-6 garlic clove minced

πŸ”₯Β 2 stalk celery diced

πŸ”₯Β 1 14oz (398 ml) can diced tomatoes (fire roasted is a good option)

πŸ”₯Β 1 & 3/4 c water

πŸ”₯Β 1 TB bouillon soup base of your choice

πŸ”₯Β 3 TB chili powder

πŸ”₯Β 1 TB cumin

πŸ”₯Β 1 tsp ancho chili powder

πŸ”₯Β 1/4 tsp onion powder

πŸ”₯Β 1/4 tsp granulated garlic

πŸ”₯Β 1 TB sugar or sweetener of your choice

πŸ”₯Β 1 tsp mustard

πŸ”₯Β 2 (540 ml) 19oz can pinto beans, drained and rinsed

πŸ”₯Β 1 (540 ml) 19 oz can red kidney bean, drained and rinsed

Options for Toppings:

- cilantro

- salsa or pico de gallo

- avocado slices

- sour cream

- green onions

- diced white onion

- tortilla chips

Instructions:

  1. Heat a large pot on medium heat with oil (or water or stock), diced onion and a pinch of salt and pepper. Cook for 5 minutes, stirring occasionally.
  2. Next add in the garlic, peppers, and celery pieces and cook 5-7 minutes. Get those veggies soft stirring a few times.
  3. Now add the rest of the ingredients to the pot and mix in. Bring the chili to a boil, then reduce the heat to a simmer and cover for 25 minutes. Stir once or twice.
  4. This step is optional. After 25 minutes, uncover the chili and add one soup ladle full of the chili to a blender. Blend until smooth and add puree back in.
  5. Serve up the chili with your favorite topping! You can have it over hot dogs or dip your tortilla chips into.

Variations:

* To be meaty you can brown 1 lb ground meat of your choice in the first step with the onion and oil. For vegetarian/vegan meat substitutes you can include crumbled up tofu, TVP (textured vegetable protein), or another meatless crumble.

* If spicy heat is not your thing you can cut back on the amount of chili powder.

* I like to add in 1 TB of paprika to this recipe.Β πŸ˜‹
