Cranberry Pomegranate Bellinis with Lime
Ingredients:
For the simple syrup:

  • ½ cup unsweetened 100% cranberry juice
  • ½ cup unsweetened 100% pomegranate juice
  • 1 cup sugar

For each Bellini:

  • 1 ounce simple syrup
  • 3 to 4 ounces Prosecco/champagne, or seltzer for non-alcoholic
  • Squeeze of fresh lime juice
  • Whole cranberries and slices of lime for garnish, optional

Instructions
To make simple syrup:

  • In a small pot, stir together fruit juices and sugar.
  • Set pot over medium-high heat and bring to a boil.
  • Turn to low and simmer for 5 minutes, stirring until sugar completely dissolves.
  • Pour syrup in a jar and cool completely. Store in refrigerator until ready to use.

To make a Bellini:

  • Pour 1 ounce of cranberry-pomegranate simple syrup into a champagne flute.
  • Top with 3 to 4 ounces of Prosecco.
  • Squeeze a wedge of lime into the bellini.
  • For a garnish, use a toothpick to skewer a whole cranberry and half slice of lime, if desired.

Notes:

  • If your cranberry and/or pomegranate juice is already sweetened, reduce the amount of sugar in the simple syrup to ½ cup.
  • To make a pitcher of bellinis, mix 1 cup of cranberry-pomegranate simple syrup with a 750mL bottle of Prosecco. Squeeze in the juice of one lime. Taste and add additional simple syrup, if desired.

Sparkling Raspberry Mocktail

Ingredients:

  • 1  12 ounce frozen raspberry lemonade concentrate
  • 3 cup cold water
  • 1 cup frozen raspberries, or fresh work too
  • 1 bottle Sparkling Grape Juice

Instructions:

  • In a small pitcher mix frozen lemonade concentrate and three cups of water.
  • For ice-cubes sprinkle raspberries into an ice cube tray and then slowly pour the raspberry lemonade mix over them. Set the remaining drink mix aside until later.
  • When ready to serve add ice cubes to each glass and pour about one tablespoon of the raspberry lemonade in the bottom of each glass.
  • Top off the glass with sparkling grape juice and toast!

Notes:

If you are using deep ice cube trays I recommend only filling 1/2 way high so they will fit in champagne flutes.

Apple Cider Mocktail

Ingredients:

Cinnamon-Ginger Simple Syrup

  • 1 cup sugar
  • 1 cup water
  • 2 cinnamon sticks
  • 1-2 inches ginger root, peeled and thinly sliced

For One Mocktail

  • 2 tablespoons cinnamon-ginger simple syrup, chilled
  • 1 cup apple cider, chilled
  • ice for mixing
  • cinnamon sugar, for rimming the glass
  • apple slice or cinnamon stick to garnish (optional)

Instructions

For the Simple Syrup:

  • Mix sugar, water, cinnamon sticks, and sliced ginger root in a small saucepan over medium heat. Heat until sugar is dissolved.
  • Let cool completely. When cool, strain to remove ginger and cinnamon sticks.

For the Mocktail:

  • Pour cinnamon sugar into a shallow bowl or plate. Prepare martini glass by wetting the rim with apple cider and then dipping in cinnamon sugar.
  • Add ice to martini shaker. Pour in cider and simple syrup. Shake for 10 to 15 seconds.
  • Pour into prepared glass. Garnish with apple slice or cinnamon stick.

Notes

This is a fairly sweet drink. Adjust the amount of simple syrup to your liking.

To make a cocktail, add 1 oz. vodka, bourbon, rum, or spiced rum to shaker.

If preferred, instead of using a shaker, serve mocktail with ice in a short tumbler such as a rocks, low-ball, or old-fashioned glass. Garnish as desired.

Slow-Cooker Peppermint Bark Hot Chocolate

Ingredients:

  • 8 c. whole milk
  • 1 can sweetened condensed milk
  • 3 c. bittersweet or semisweet chocolate chips
  • 1/4 c. crème de menthe or vodka (Leave out for a non-alcoholic hot chocolate)
  • 1 tbsp. vanilla extract
  • 1 tsp. peppermint extract
  • 1/4 tsp. salt
  • Sweetened whipped cream
  • Crushed candy canes

Directions:

  • Put the milk, sweetened condensed milk, chocolate chips, crème de menthe (or vodka), vanilla extract, peppermint extract, and salt in a 7-quart slow cooker.
  • Cover and cook on high 2 hours or until combined, whisking vigorously halfway through to help chocolate melt.
  • Switch to warm for serving. Set out whipped cream and crushed candy canes, for topping.

LOW CARB WHISKEY SOUR

  • 5 tablespoons whiskey
  • 5 tablespoons lemon juice
  • 5 tablespoons water
  • 2 tablespoons of sugar free sweetner of your choice

Serve with carb friendly snakcies

  • Cheese whisp crackers
  • Keto bread toast with salmon and cream cheese spread
  •  Cocktail shrimp with low carb sauce
