Getting up early to make breakfast can be a total pain in the ass.Ā 
Ā 

I have manic depression and an eating disorder , so it gets really easy to just skip breakfast because my body is too tired or I have nasty thoughts in my head telling me I donā€™t need food to stay alive. For people that have eating issues , depression , or physical limitations , having prepped food like this can make a huge difference in making the effort to make yourself food.Ā

One of the easiest meals to prep for is variants of egg dishes (vegan or regular eggs).Ā

In the house of Monkey egg dishes are a staple since Iā€™m the one who cooks 99% of the meals and prepping for them is easier than most other dishes.Ā

The amount I prep makes enough breakfasts for Dad and Brother with myself nibbling on what I feel like for the entire week. (6-7 full days of breakfast.)Ā 

If itā€™s a small onion Iā€™ll grab two , or just one huge white onion. Two bell peppers of your choice , and jalapeƱos ! You can skip the jalapeƱo if you donā€™t like things to have a kick.Ā

I also decided to prep all of my garlic for the week that Iā€™ll need for dinners since I had my knife and cutting board out already.Ā

The onions were put Ā in a separate container , which youā€™ll see in the following picture.Ā

Using vegan eggs makes my life even easier because itā€™s just liquid in a bottle šŸ˜… So you just shake it up and pour it in.Ā

An easy way to make eggs less boring is by adding potatoes and / or sausage ! Make it a hobo hash !Ā 
Ā 

You can either prep potatoes by hand , or you can keep a bag of frozen potato cubes in the freezer. I used frozen potatoes today because Dad said he wanted hash.Ā

Prepping veggies like that ahead of time is such a good idea. Sometimes the thought of all that washing, chopping, etc discourages me to get started especially in the morning. Thanks for the tip!!Ā šŸ‘

I had left over cucumbers that werenā€™t bad but also not in great shape , so I decided to do an Asian quick pickle on them.Ā
