There are so many tiny (or not so tiny) little tips and tricks in the kitchen we’ve either learned from grandparents , culture , reading older books or cooking shows. Sometimes because of the regions we grow up in or just different environments in general , we don’t all learn the same “basics”.

I suppose an example of this is how many times I’ve had small talk with customers or acquaintances about cooking , I mention I wash my rice and they act like I’m crazy ! I thought this was just basic common knowledge ?

Washing rice was taught early on in my house.

First , most rice will look like this when you first fill the pot with water ;

Its super milky , right ? Kinda hard to see my fingers through.
I fill the pot with water and mix the rice really well and rub it between my fingers gently and drain the water.

I’ll fill the pot with water again and it’ll be about this color ;

Little better ! Typically I do three washes , so I’ll drain and fill the pot once more.

After the third wash ! This is what I wanna see 😎 Clear. This will clean your rice (duh) and help make it fluff up much better when it’s being cooked. I’ll drain the water out again , and do the normal ratios and cook the rice.

What are some basic tips and tricks you’ve learned that have made a difference in the quality of your dishes ? Or made things more simple , and time effective ?

The magic of water! Growing up my mom would cook from dry beans every week. Washing and soaking them overnight would cut down on the cooking time by A LOT. Today we have instapots to shorten that to mere minutes but not everyone has one.

We’re slowly teaching @Expired how to cook and bake stuff , and he definitely likes the easier routes hehe like an instant pot.

There’s something about doing little baby steps like this that feel like witchcraft in the kitchen , adding your time and love 💕 That’s why grandparents food always tastes better I think.

 I've never washed my rice but I may do an experiment this weekend to see the difference. Rice cooking is kind of a touchy subject down here, like most cooking can be lol. Things like rice cookers or stirring your rice once it's going can lead to fun conversations. I overheard a slightly heated exchange one day because someone said you need to stir your rice while it's cooking. The next thing I heard was something like "WHAT?! Mais get out da kitchen ! No, Seriously, get away from da rice you couyon you ! (couyon means fool or foolish person)". The convo went on for a few minutes with a lot of shock and disgust, mostly in fun but with a hint of truth mixed in.

I do soak my beans overnight for most dishes. I even soak them overnight if they will be cooked in the crock pot. Now I want red beans and rice 🙂

This tip is also good when you are cooking pasta. Just toss the broccoli in the water when there's a minute or two left. Drain and rinse with the noodles like normal.

After washing the rice, leave it in water for some time, half an hour to an hour, and when cooking, add a smaller amount of water than usual, so it is cooked better and tastier.
