I’m allergic to peanut butter, so my hubby makes me these yummy SunButter cookies, with chocolate chips. We made them today, so I thought I would share the recipe. πŸ₯°

🌻 Sunbutter Cookies 🌻

1/2 Cup Margarine/Butter (1 Stick)

1/2 Cup SunButterΒ 

1/3 Cup Brown Sugar

1 Egg (Beaten)

2 Cups Flour

1/4 Teaspoon Baking Powder

1/4 Teaspoon Baking Soda

1/4 Teaspoon Salt

1 (12oz) Bag Semi-Sweet Chocolate Chips

3/4 Cup Sunflower Seeds (Kernels - No Shells!)

3/4 Cup Light Corn Syrup*

*To make your own light corn syrup, simply mix 1 cup of granulated sugar in 1/4 cup WARM water.

  1. Heat oven to 350Β°F. Line baking sheet with parchment paper, set aside.
  2. In large bowl, cream margarine, SunButter, brown sugar and corn syrup until light and fluffy. Add egg, mix well. (Use cold butter, and a mixer on low speed.)
  3. In medium bowl, combine flour, baking soda, baking powder, and salt, stirring to combine. Gradually add to creamed SunButter mixture. (Continue mixing with mixer as you add in dry ingredients.)
  4. Using a spatula, gently mix in your sunflower seed kernels and chocolate chips until combined.Β 
  5. Spoon 1-inch balls of cookie dough and place on your parchment-lined cookie sheet, about 2 inches apart.Β 
  6. Bake for 20 minutes or until golden brown. Let cool on pan slightly before removing.Β 
  7. Store cookies in airtight container when completely cooled.Β 

Makes 3 dozen cookies! πŸͺπŸ–€

Refrigerate your dough in between batches. (You can fit 1 dozen per cookie sheet.)
