This recipe looks absolutely SCRUMPTIOUSΒ πŸ˜‹Β Butternut squash soup and homemade bread is one of my favorite comfort and cozy foods.

🍞BREAD🍞

  • 3 cups warm water
  • 1 TB sugar
  • 1 pkg active dry yeast
  • 6 cups flour
  • 3 tsp salt

First you want to activate the yeast in the warm water and sugar by stirring it in and letting that sit for about 5 minutes. Bubbles or foam is the sign that the yeast is ready. Slowly mix in half of the flour and salt then the other half; letting the flour absorb evenly. Cover the bowl with a plastic wrap and towel to let rise 2-3 hours. You want the dough to get all puffy and bubbles forming (that's the yeast doing it's job). Turn out dough onto a floured surface and knead for about a minute. If it's too sticky gradually use more flour. Divide the dough into 2 equal parts for loaves or 4 parts for bread bowls. Heat your oven to 450 F and place a pan of water on the lowest rack (this will help the bread's outer crust be extra crispy). Place your bread on a baking sheet lined with parchment paper. Bake in the oven 25-30 minutes to get a golden brown color on the bread. Give it a thump to see if it's done (hollow sounding). Let the bread cool down an hour before you slice into it.

🍲SOUP🍲

  • 1 onion (diced and sauteed)
  • 3 minced garlic cloves
  • 4 peeled, diced potatoes
  • 2 peeled, diced carrots
  • 3 cups cubed butternut squash
  • 3 cups vegetable broth/stock

She shows in the video dumping all of these ingredients into an instapot for 12 minutes. I have made this over the stove before. Just make sure you sautee the onions first in a bit of oil and then you should be fine dumping in everything else. Bring the soup to a boil and then turn the heat down to simmer a good 20-30 minutes (you want all the vegetables to be soft and tender). Use a masher or an immersion blender to smooth everything together in the pot. Add 1 can of rich coconut milk (heavy cream would be good if you prefer that). Serve the soup up with some toppings like green onions, bacon bits, toasted squash seeds, black pepper, or whatever you like.
