I developed this banana bread over like 4 years until I had it just the way Daddy and I like it. I hope you love it, too!

The way it's written, it's free from dairy, eggs, wheat/gluten, coconut, soy, and tree nuts.Β 

Buuuuuut... this recipe is super easy to make substitutions with! Feel free to use all purpose flour and/or dairy butter, or even coconut oil (softened, not melted). I usually add walnuts, peanuts, or pecans.Β

πŸ’ 🍌 The World's Most Amazing Banana Bread/Muffins 🍌 πŸ’Β 

1 1/2 cup banana puree (About 4-5 REALLY ripe bananas - the darker the peel the sweeter and the easier to mash/puree. And also fewer chunks)Β 

2 cups flour (I use a gluten free blend with xantham gum in it)Β 

3/4 teaspoon baking soda

1/2 teaspoon nutmeg or cinnamonΒ 

1/2 cup butter, softened

1 cup cane sugar

1/8 teaspoon white vinegar

Optional:

Demerara sugar to sprinkle on top before baking

About 1/2 cup chopped nuts or chocolate chips folded into batter

1. Preheat oven to 350Β°F. Grease and flour a 9x5 loaf pan or prepare muffin tin with liners.Β 

2. In a medium bowl, whisk together flour, baking soda, and nutmeg or cinnamon until well combined. Set aside.

3. In a large bowl, beat sugar and butter until light and fluffy. Add vinegar and stir to blend in.Β 

4. Add banana puree and flour alternately -starting with banana- about 1/2 cup at a time, mixing by hand until just combined after each addition.Β 

*if you are adding nuts or chocolate, dust them with a wee bit of flour (prevents them sinking to the bottom) and fold into your batter here*Β 

5. Pour into prepared pan or muffin liners and smooth top. *optional: sprinkle with demerara sugar and/or finely chopped nuts*

6. Bake 35-45 minutes for muffins or 50-60 minutes for bread. A toothpick inserted off center should come out clean when you're bread/muffins are done baking! Turn off oven and crack open the door for about 10 minutes (sudden temperature changes can make your bake sink), then transfer to cooling rack.Β
