So this is a recipe I found recently for easy blueberry cobbler, which was very tasty, but I wanted something more fall themed this time so I used apples instead.Β 
BlueBerry Cobbler Recipe

  • 1 (8-ounce) tub whipped cream cheese
  • 1/2 cup powdered sugar
  • 3 cups (roughly) chopped apples
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground pumpkin spice
  • 1/4 teaspoon salt
  • 1 can refrigerated cinnamon rolls with icing (8-count)

Directions

1. Heat oven to 350 degrees. Spray a 9- by 7-inch baking dish (with at least 2-inch sides) with nonstick cooking spray (or flour coat the pan) Set aside.

2. In a large bowl, whisk together the whipped cream cheese and powdered sugar until well blended and smooth.Β Add cinnamon, nutmeg and salt and stir.

3. Fold apples into cream cheese mixture until well combined.Β 

4. Separate dough into 8 rolls; return icing to refrigerator. Chop each roll into coin sized pieces . Stir dough pieces into apple mixture until evenly coated.

5. Spoon dough mixture into prepared baking dish. Bake 35-40 minutes, or until bubbling around edges and dough is baked through in center.

6. Cool 10 minutes. Warm up icing in microwave for 5-10 seconds or leave to warm next to pan for a few minutes, then pour/spread icing on top.Β 

Then EAT IT ALL!! joking....Β 
Yields 6-8 small servings.
