A friend of mine has lots of tomatoes and basil growing in their garden to share. So, I made this yummy Italian appetizer with those main ingredients!

Italian Tomato Bruschetta on a platter

There isn't exact measurements with this recipe so have some fun! I cut up a mozzarella cheese stick instead of using parmesan.Β πŸ˜‹Β Personally, I prefer broiling this in the oven for a few minutes to make the bread crispy and the cheese all melty.

Ingredients:

Fresh tomatoes

Fresh basil

Olive oil

Balsamic Vinegar

Fresh garlic

Salt & Pepper

Bread of choice for toasting

Looks so good.

There is something magical that happens when you combine heat, especially open flame and cheese. Those oils start coming out and the taste is elevated to some place wonderful. Yep I'm a cheese lover.

Yes, eating a cold cheese stick grosses me out. But when toasted up like this, on a pizza, or on top of french onion soupΒ πŸ˜‹Β It's like this is what cheese was made for!

There is NOTHING better than fresh Bruschetta on a toasted organic sour dough bread. - well ok that might not be true. When I am in a hurry i just finely dice up tomatoes, grateΒ  A LOT pf fresh garlic into it with salt, vinegar and olive oil - toast some bread - and bruschetta in less that 5 min
