I love onigiri and inari pockets , it can be a little time consuming to make but it’s worth it for meal prepping during the week. Especially during when it’s super hot during summer because you can eat these chilled , and it’s always fun to eat with your hands. (These would be great for taking on a picnic as well!)

You can easily make this vegan , vegetarian , or pescatarian ! Just swap out the protein from tofu to either beef , pork , chicken or fish !Β

ONIGIRI :

-Rice-

Basic rice cooking instructions Β , rinse your rice before cooking and let it fully cool off before mixing it a little bit of sushi vinegar. Set aside to rest while you prepare your filling.Β

-Filling options , all fillings are interchangeable between onigiri and inari !-Β 

* Vegan crabΒ 

-Press firm tofu to get all the excess liquids out.

-Sounds weird , but gently use a cheese grater on the thick cut to get those fake crab like shreds out of the tofu.

-For about one block of tofu , you will mix in a tablespoon of fish free furikake , one cup of vegan mayo , and add sriracha to your spice tolerance and preference. Gently mix and chill.Β

* Glazed tofu

-Press firm tofu to get all the excess liquid out.

-Cut the tofu into small squares and set aside.Β 

-Prep mince garlic and green onion , set aside.Β 

-Mix together one cup of soy sauce (or amino acids for a healthier option) with half a cup of sugar (or stevia for a healthier option) until all sugars are dissolved.Β 

-In a large pan , add a small tab of oil and the tofu. With medium to high heat , add your tofu and garlic until it gets crisped up. After it’s crisped up , turn the heat to medium low and add your soy sauce glaze while stirring continuously until the glaze thickens.Β 

* Fried riceΒ 

- Just use leftovers dog , easy way to use up left over take out !Β 

Inari is very easy , it’s an open pocket so you literally just shove your filling into it.Β
